Fiber Filled Egg Zoodles

So if there’s one thing I’m pretty certain about, it’s that most people don’t consume enough fiber in their diet. I’m sure we can all recall our parents telling us to “eat our veggies” at the dinner table, as we turned up our nose at that first bite of broccoli.
When I stumbled across this one that incorporates zucchini, eggs, and avocado,
I knew I had to get cooking :). Zucchini is a great vegetable that yields wonderful fiber content. Pair it with an egg for protein and the healthy fat of an avocado, and you’ve got yourself a well-balanced meal!
If zucchini is simply not your thing, you can always spiralize other veggies such as carrots, squash, or beets. All still include wonderful nutritional benefits.
And without further ado… Here is the recipe:
Ingredients:
1 tsp. olive oil
1 spiralized zucchini or other veggies of your choice (here (include link) is the spiralizer I use)
1 egg (organic)
⅓ avocado
Salt
Pepper
Red Pepper Flakes

Directions:
- Over medium heat in a pan or skillet, add olive oil and zucchini noodles
- Mold zucchini noodles into a nest shape and crack egg in the center
- Sprinkle pepper and salt to taste and cover pan until the yolk is cooked through
- Once cooked, remove from pan and add the avocado and red pepper flakes
